Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
  3. In a large bowl, cream the softened butter and brown sugar until light and fluffy.
  4. Add the eggs one at a time, then mix in the apple cider and vanilla extract until blended.
  5. Gradually mix in the dry ingredients until just combined.
  6. Drop spoonfuls of dough onto baking sheets, spacing them 2 inches apart.
  7. Bake for 12-15 minutes, until edges are golden. Cool on baking sheets for 5 minutes before transferring to wire racks.
  8. For the filling, melt butter in a saucepan, stir in brown sugar, heavy cream, and vanilla. Boil for 1 minute, stirring constantly.
  9. Let the caramel cool for about 10 minutes to thicken.
  10. Spread or pipe caramel onto the flat side of half the cookies and sandwich with the remaining cookies.
