Ground Beef and Sweet Potatoes Skillet

A delicious one-pan meal featuring ground beef and sweet potatoes, perfect for busy weeknights.

  • 1 pound ground beef
  • ½ cup onion, diced
  • 2 cloves garlic, minced
  • 3 cups sweet potatoes, cubed
  • 2 tablespoons taco seasoning
  • 1 cup water
  • 1 cup frozen corn
  • 1 poblano pepper, diced
  • 1 cup shredded cheese (optional)
  • Fresh cilantro for garnish
  • Avocado slices for garnish
  • Sour cream for serving

Instructions

  1. Prep your ingredients by dicing the onion, mincing the garlic, cubing the sweet potatoes, and dicing the poblano pepper.
  2. In a large skillet, heat oil over medium-high heat and add the ground beef, cooking until browned. Drain excess fat if necessary.
  3. Add diced onion and minced garlic to the skillet, cooking for about 2-3 minutes until the onion is translucent. Stir in the taco seasoning.
  4. Add cubed sweet potatoes, pour in the water, and stir to combine. Cover and simmer for 15-20 minutes until the sweet potatoes are tender.
  5. Stir in frozen corn and diced poblano pepper, cooking for an additional 5-7 minutes.
  6. If desired, sprinkle shredded cheese over the skillet and cover until melted.
  7. Garnish with fresh cilantro, avocado slices, and a dollop of sour cream before serving.

Notes

This dish is customizable with various toppings and can be served with rice, tortillas, or as nacho topping.
