Broccoli Cheddar Stuffed Chicken Breast

A delicious combination of chicken, broccoli, and creamy cheddar cheese, baked to perfection.

  • 4 pieces Chicken Breasts (Thick-cut, boneless, skinless)
  • 1 cup Broccoli (Fresh or frozen, chopped)
  • 4 oz Cream Cheese (Consider Neufchâtel for lighter option)
  • 1 cup Cheddar Cheese (Sharp cheddar recommended)
  • 1 tbsp Cajun Seasoning (Adjust for milder taste)
  • ½ tsp Salt (For seasoning)
  • 2 tbsp Olive Oil (Melted butter can be a substitute)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. If using fresh broccoli, steam or microwave until tender; chop into smaller pieces. If using frozen broccoli, follow package instructions.
  3. In a bowl, mix chopped broccoli, cream cheese, cheddar cheese, Cajun seasoning, and salt until well combined.
  4. On a cutting board, carefully make a pocket in each chicken breast.
  5. Spoon the broccoli and cheese mixture into each pocket, securing with toothpicks if necessary.
  6. Brush the outside of the stuffed chicken with olive oil and sprinkle additional Cajun seasoning if desired.
  7. Bake in the preheated oven for 25-30 minutes, until the internal temperature reaches 165°F (75°C).
  8. Allow the chicken to rest for a few minutes before serving.

Notes

This dish pairs well with roasted vegetables, rice, or mashed potatoes.
