12 oz (340g) bowtie pasta (farfalle)
1 lb (450g) ground beef
2 tbsp olive oil
1 small onion, finely chopped
2 cloves garlic, minced
1 tsp Italian seasoning
½ tsp red pepper flakes (optional, for spice)
Salt and pepper to taste
3 tbsp unsalted butter
2 cloves garlic, minced
1 tbsp all-purpose flour
1 cup (240ml) milk (whole or 2%)
1 cup (100g) shredded mozzarella cheese
½ cup (50g) grated Parmesan cheese
2 tbsp fresh parsley, chopped (for garnish)
Instructions
Cook the Pasta: Boil a large pot of salted water, add bowtie pasta, and cook according to package instructions until al dente (8-10 minutes). Reserve 1 cup pasta water, then drain.
Sauté the Onions and Garlic: Heat olive oil in a large skillet over medium heat, add onion, and sauté until translucent (4-5 minutes). Add minced garlic and sauté for another minute.
Brown the Ground Beef: Add ground beef to the skillet, break it apart while cooking, and season with Italian seasoning, red pepper flakes, salt, and pepper. Brown beef for 5-7 minutes. Drain excess fat.
Make the Cheese Sauce: In the same skillet, melt butter over low heat, add minced garlic, then flour. Stir for 1 minute, then gradually whisk in milk and cook until thickened (3-4 minutes). Mix in mozzarella and Parmesan until smooth.
Combine Pasta and Sauce: Add drained pasta to the skillet with beef and cheese mixture. Mix well, using reserved pasta water to adjust consistency if needed.
Serve: Adjust seasoning and serve warm, garnished with chopped parsley.
