1 lb Chicken Sausage
4 cups Chicken Broth
2 cups Carrots (chopped)
2 cups Celery (chopped)
1 cup Spinach or Kale
1 tsp Garlic (minced)
1 tsp Italian seasoning
Salt and Pepper to taste
Prepare the Ingredients: Begin by chopping your vegetables: carrots, celery, and any others you’re using. This step is crucial for even cooking and flavor distribution.
Cook the Sausage: In a large pot or Dutch oven, heat a tablespoon of olive oil over medium heat. Once hot, add the chicken sausage. Cook until browned and fully cooked, which should take about 5-7 minutes. Remove from pot and set aside.
Sauté the Vegetables: In the same pot, add a bit more olive oil if needed. Toss in garlic, carrots, and celery and sauté for about 5 minutes until softened.
Add the Broth: Pour in the chicken broth and bring to a boil. This will help lift all the flavorful bits stuck to the bottom of the pot.
Add Sausage and Greens: Return the sausage to the pot, add spinach (or kale), and season with Italian seasoning, salt, and pepper. Reduce to a simmer and cook for an additional 10-15 minutes.
Adjust Seasoning: Taste the soup and adjust seasoning as needed. Feel free to add more spices or salt. You can also add a squeeze of lemon for freshness.
Serve: Ladle the soup into bowls, and if desired, garnish with fresh herbs or a sprinkle of cheese. Enjoy your warm, hearty meal!
