Delightful and decadent Chocolate Whoopie Pies filled with a sweet filling between two soft chocolate cookies.

  • 1 tablespoon Instant Espresso Powder (optional)
  • 2 large Eggs
  • 1 cup Whole Milk
  • 1/2 cup Full-Fat Sour Cream
  • 1/2 cup Vegetable Oil
  • 1 teaspoon Vanilla Extract
  • 1/2 cup Unsalted Butter, softened
  • 2 cups Powdered Sugar
  • 2 tablespoons Meringue Powder (optional)
  • 1/4 teaspoon Extra Coarse Kosher Salt
  • 1 teaspoon Additional Vanilla Extract

Instructions

  1. Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. Prepare Dry Ingredients: In a large bowl, sift together the flour, granulated sugar, cocoa powder, baking powder, baking soda, salt, and espresso powder (if using).
  3. Mix Wet Ingredients: In another bowl, whisk together the eggs, whole milk, sour cream, vegetable oil, and vanilla extract until smooth.
  4. Combine Wet and Dry: Gradually add the wet ingredients to the dry ingredients, gently stirring until just combined.
  5. Scoop the Batter: Portion out small mounds of batter onto the prepared baking sheets, leaving about 2 inches of space between each.
  6. Bake: Bake for about 10-12 minutes or until they spring back when touched.
  7. Cool the Cookies: Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
  8. Make the Filling: Beat together softened butter and powdered sugar until fluffy. Mix in meringue powder, extra salt, and additional vanilla extract.
  9. Assemble the Whoopie Pies: Spread a generous amount of filling on one cookie and top with another cookie, repeating until all cookies are filled.
  10. Serve and Enjoy: Chocolate Whoopie Pies are best enjoyed fresh, but can be stored for later.
