Churro Cupcakes with Cinnamon Cream Cheese Frosting

A delightful twist on classic churros, incorporating cinnamon and sugar flavors into a soft cupcake topped with fluffy cream cheese frosting.

  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup milk
  • 1 tsp cinnamon
  • 1 package cream cheese, softened
  • 1 cup powdered sugar
  • 1/4 cup unsalted butter, softened (for frosting)
  • 1 tsp vanilla extract (for frosting)
  • Cinnamon sugar (for dusting)
  • Mini churros (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake tin with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. Add softened butter, eggs, vanilla, and milk to the dry ingredients and mix until smooth.
  4. Fill each cupcake liner about two-thirds full with the batter.
  5. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  6. Cool the cupcakes in the tin for a few minutes before transferring to a wire rack.
  7. For frosting, beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla until well mixed.
  8. Frost the cooled cupcakes and sprinkle with cinnamon sugar.
  9. Top each cupcake with a mini churro and serve.
