Cowboy Cornbread Casserole

A hearty, layered casserole featuring ground beef, black beans, and a fluffy cornbread topping, perfect for family dinners or gatherings.

  • 1 lb ground beef
  • 1 cup diced onion
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (12 oz) diced tomatoes
  • 1 packet taco seasoning
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 box cornbread mix
  • 1 egg
  • 1 cup milk

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet, cook the ground beef and diced onion over medium heat until browned and onions are soft, about 5-7 minutes.
  3. Stir in black beans, corn, diced tomatoes, and taco seasoning. Cook for an additional 5 minutes.
  4. Layer the beef mixture in a greased casserole dish.
  5. Prepare the cornbread mix according to package instructions, adding the egg and milk.
  6. Pour the cornbread batter over the beef mixture.
  7. Sprinkle shredded cheese on top.
  8. Bake for 25-30 minutes, or until golden brown and a toothpick comes out clean.
  9. Let cool for a few minutes before serving.

Notes

For a vegetarian version, substitute ground beef with beans or plant-based meat. You can also customize the recipe by adding more vegetables or spices.
