Cowboy Cornbread Casserole

A comforting casserole featuring ground beef, beans, and corn topped with a delightful cornbread mix, making it perfect for family dinners and potlucks.

  • 1 lb ground beef
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 1 cup shredded cheese
  • 1 cup cornbread mix
  • 1 cup milk
  • 1 egg
  • 1 cup shredded cheese for topping

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, brown the ground beef over medium heat for about 6 to 8 minutes, then drain excess grease.
  3. Add black beans, corn, diced tomatoes, and taco seasoning to the skillet, cooking for about 5 minutes.
  4. In a separate bowl, combine cornbread mix, milk, and egg, whisking until smooth.
  5. Spread the beef mixture evenly in a greased baking dish, then pour the cornbread batter over it.
  6. Sprinkle shredded cheese on top of the cornbread batter.
  7. Bake in the preheated oven for about 25-30 minutes until the top is golden brown.
  8. Allow to cool for a few minutes before slicing and serving.

Notes

For added flavor, garnish with fresh cilantro or sliced green onions. Pair with salad or tortilla chips.
