Cowboy Cornbread Casserole

A hearty and flavorful casserole combining ground beef, black beans, corn, diced tomatoes, and a fluffy cornbread topping, perfect for family dinners.

  • 1 lb ground beef
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup milk
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 cup sugar
  • 2 large eggs
  • 1/2 cup melted butter

Instructions

  1. Preheat your oven to 400°F (200°C) and grease a 9×13 inch baking dish.
  2. In a large skillet, brown the ground beef over medium heat and drain excess fat.
  3. Add black beans, corn, diced tomatoes, and taco seasoning to the skillet; cook for another 5 minutes.
  4. Pour the beef mixture into the prepared baking dish.
  5. In a separate bowl, mix cornmeal, flour, baking powder, and sugar.
  6. In another bowl, combine milk, eggs, and melted butter. Stir until well mixed.
  7. Combine wet and dry ingredients carefully until just combined.
  8. Pour the cornbread batter over the beef mixture and spread evenly.
  9. Top with shredded cheddar cheese.
  10. Bake for 25-30 minutes until the cornbread is golden brown and a toothpick comes out clean.
  11. Let it cool slightly before serving.

Notes

Serve with toppings like sour cream, green onions, or cilantro. Great for potlucks and easy to store leftovers.
