Creamy Chicken Pesto Pasta

A delightful dish combining creamy sauce, tender chicken, and aromatic basil pesto, perfect for family dinners or casual gatherings.

  • 2 cups gluten-free bowtie (farfalle) pasta
  • 2 cups cooked chicken breast, shredded or diced
  • 1 cup heavy cream
  • 1/2 cup basil pesto
  • 1/4 cup grated Parmesan cheese (plus more for garnish)
  • 1 cup cherry tomatoes, halved
  • 1 tablespoon olive oil
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

  1. Boil a large pot of salted water and cook the gluten-free bowtie pasta according to package instructions for about 8-10 minutes. Drain and set aside.
  2. In a skillet, heat olive oil over medium heat and sauté the cooked chicken for about 2 minutes to warm it up.
  3. Sprinkle garlic powder into the skillet and stir to coat the chicken evenly.
  4. Lower the heat to medium-low, add heavy cream, and stir until it simmers.
  5. Add basil pesto and cook for another 2-3 minutes.
  6. Toss in the cooked pasta, mixing gently to coat with the sauce.
  7. Add halved cherry tomatoes and season with salt and pepper to taste.
  8. Serve warm, garnished with additional Parmesan cheese and fresh basil leaves.

Notes

For a lighter dish, reduce the amount of heavy cream or substitute with a lower-fat cream. You can also add vegetables like spinach or zucchini for more nutrition.
