Crispy Akara

Crispy Akara, or Crispy Bean Cakes, are delightful, protein-packed snacks made primarily from black-eyed peas, beloved in West Africa.

Ingredients

  • 2 cups Black-Eyed Peas (soaked)
  • 1 medium Onion
  • 1 teaspoon Cayenne Pepper (adjust to taste)
  • 1 teaspoon Fresh Ginger Root (or ginger powder)
  • 2 tablespoons Crayfish (optional)
  • 1 teaspoon Salt (to taste)
  • 2 cups Peanut Oil (or vegetable oil for frying)
  • 1 optional Habanero Pepper

Instructions

  1. Soak the black-eyed peas for about 6 hours or overnight.
  2. Drain and rinse the peas thoroughly.
  3. Blend the soaked peas, chopped onion, cayenne pepper, ginger, and salt until smooth.
  4. Chop and mix in the habanero pepper if desired.
  5. Heat the oil over medium heat and check readiness.
  6. Scoop portions of batter into the hot oil and fry for 4-5 minutes until golden brown, flipping to cook evenly.
  7. Remove and drain on paper towels.
  8. Serve hot with or without dipping sauce.

Notes

For best results, fry in small batches and monitor oil temperature to avoid sogginess or burning.
