Instructions
Heat a large skillet over medium heat and add the ground beef, breaking it apart while cooking until it begins to brown.
Add finely diced onion and minced garlic, cooking for about 5 minutes until the onion is soft.
Add chili powder, ground cumin, smoked paprika, oregano, salt, and black pepper to the mixture and stir to combine.
Pour in tomato sauce or salsa and let it simmer for about 5 minutes. Remove from heat and stir in shredded cheese until melted.
Heat corn tortillas in a skillet or microwave until soft and pliable.
Place a spoonful of beef filling on one edge of a tortilla, roll it tightly, and place seam-side down. Repeat with remaining tortillas.
For frying: Heat vegetable oil in a skillet and fry rolled taquitos until golden brown (3-4 minutes). For baking: Preheat oven to 425°F (220°C) and bake taquitos seam-side down for 15-20 minutes or until crispy.
Drain fried taquitos on paper towels and serve hot with guacamole, sour cream, and salsa on the side.
