Crispy Beef Taquitos Rolls

Delicious and satisfying Crispy Beef Taquitos Rolls, perfect for parties or a quick snack.

  • 1 lb Ground Beef
  • 1 medium Onion, finely diced
  • 2 cloves Garlic, minced
  • 1 tbsp Chili Powder
  • 1 tsp Ground Cumin
  • 1 tsp Smoked Paprika
  • 1 tsp Dried Oregano (optional)
  • Salt, to taste
  • Black Pepper, to taste
  • 1 cup Tomato Sauce or Salsa
  • 1 cup Shredded Cheese (Cheddar, Monterey Jack, or Mexican Blend)
  • 12 Corn Tortillas
  • Vegetable Oil
  • Guacamole, for dipping
  • Sour Cream
  • Salsa
  • Shredded Lettuce
  • Diced Tomatoes
  • Chopped Cilantro

Instructions

  1. Heat a large skillet over medium heat and add the ground beef, breaking it apart while cooking until it begins to brown.
  2. Add finely diced onion and minced garlic, cooking for about 5 minutes until the onion is soft.
  3. Add chili powder, ground cumin, smoked paprika, oregano, salt, and black pepper to the mixture and stir to combine.
  4. Pour in tomato sauce or salsa and let it simmer for about 5 minutes. Remove from heat and stir in shredded cheese until melted.
  5. Heat corn tortillas in a skillet or microwave until soft and pliable.
  6. Place a spoonful of beef filling on one edge of a tortilla, roll it tightly, and place seam-side down. Repeat with remaining tortillas.
  7. For frying: Heat vegetable oil in a skillet and fry rolled taquitos until golden brown (3-4 minutes). For baking: Preheat oven to 425°F (220°C) and bake taquitos seam-side down for 15-20 minutes or until crispy.
  8. Drain fried taquitos on paper towels and serve hot with guacamole, sour cream, and salsa on the side.
