Crunchy Oven-Baked Chicken Taquitos

Healthy and delicious Crunchy Oven-Baked Chicken Taquitos that provide a crispy alternative to traditionally fried taquitos, perfect for appetizers or main dishes.

  • 2 cups Shredded Cooked Chicken
  • 8 oz Cream Cheese
  • 1 cup Shredded Cheese (Cheddar or Mexican Blend)
  • 1/2 cup Salsa
  • 1 tbsp Taco Seasoning
  • 1 tbsp Lime Juice
  • 1/4 cup Fresh Cilantro (Optional)
  • 10 small Flour Tortillas
  • Cooking Spray or Olive Oil (as needed)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, mix together the shredded chicken, cream cheese, shredded cheese, salsa, taco seasoning, lime juice, and cilantro until well combined.
  3. Warm the tortillas in the microwave for 20-30 seconds to soften them.
  4. Place 2-3 tablespoons of the chicken mixture on one side of each tortilla, roll tightly, and place seam-side down on a greased baking sheet.
  5. Lightly spray the tops of the taquitos with cooking spray or brush with olive oil.
  6. Bake for 15-20 minutes or until golden brown and crispy, monitoring closely.
  7. Allow to cool for a few minutes before serving with your favorite dipping sauces.

Notes

Use leftover chicken for faster preparation. Experiment with different cheeses and fillings to suit your taste.
