Decadent Chocolate Mousse

A rich and velvety chocolate mousse that melts in your mouth, perfect for any occasion.

Ingredients

  • 6 oz semisweet or bittersweet chocolate
  • 2 cups heavy cream, divided
  • 2 tsp instant espresso
  • 3 large egg whites
  • 1/4 tsp kosher salt
  • 1/8 tsp cream of tartar
  • 3 Tbsp granulated sugar, divided

Instructions

  1. Start by melting the chocolate in a heatproof bowl using a double boiler or microwave in short bursts. Stir in instant espresso and set aside to cool slightly.
  2. In a separate bowl, whip 1 cup of heavy cream to medium peaks and gently fold into cooled chocolate mixture.
  3. In a clean bowl, whisk egg whites with cream of tartar until foamy. Gradually add granulated sugar while whisking until stiff peaks form.
  4. Carefully fold the beaten egg whites into the chocolate mixture in two or three additions.
  5. Portion the mousse into serving dishes and refrigerate for at least 2 hours to set.
  6. Before serving, garnish with whipped cream, fresh fruit, or mint leaves.

Notes

For best flavor, use high-quality chocolate and avoid over-whipping cream and egg whites.
