Delicious Thai Shrimp in a Blanket

An easy and delightful dish featuring crispy shrimp wrapped in spring roll wrappers, perfect for gatherings as a fun snack or appetizer.

Ingredients

Scale
  • 1 pound Large Shrimp (peeled, deveined, with tails on)
  • 3 cloves Minced Garlic (fresh preferred)
  • 2 tablespoons Oyster Sauce (or soy sauce for a vegetarian option)
  • 1 tablespoon Soy Sauce (low-sodium recommended)
  • 1 teaspoon Sugar (can be omitted for less sweetness)
  • 1/2 teaspoon Ground White Pepper (black pepper can be substituted)
  • 1 tablespoon Sesame Oil (olive oil can be a substitute)
  • 12 pieces Spring Roll Wrappers (cut into thirds)
  • 1 large Egg (for sealing the wrappers)
  • Oil for Frying (any neutral oil works well)
  • 1 cup Sweet Chili Sauce (for dipping)

Instructions

  1. Prepare the Shrimp: Wash, peel, and devein the shrimp, then dry thoroughly.
  2. Make the Flavor Mixture: Combine minced garlic, oyster sauce, soy sauce, sugar, white pepper, and sesame oil in a bowl.
  3. Marinate the Shrimp: Add shrimp to the marinade, toss well, and let it sit for 15 minutes to 1 hour.
  4. Prepare Your Wrappers: Cut each spring roll wrapper into thirds to get 36 smaller wrappers.
  5. Wrap the Shrimp: Place a marinated shrimp on a wrapper, fold sides over, roll tightly, and seal with beaten egg.
  6. Heat the Oil: Heat oil in a frying pan to 350°F (175°C).
  7. Fry the Wrapped Shrimp: Fry wrapped shrimp for about 2-3 minutes on each side until golden brown.
  8. Repeat the Process: Remove fried shrimp and repeat the frying with remaining batches.
  9. Serve: Arrange fried shrimp on a platter and serve warm with sweet chili sauce for dipping.

Notes

For added flair, garnishing with fresh cilantro or lime wedges enhances the presentation and flavor.
