  • 2 celery stalks, diced (or bell peppers, zucchini)
  • 4 cups vegetable or chicken broth (or water, stock cubes)
  • 2 cups spinach or kale (or any leafy green)

  • Instructions

  • In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
