2 packages (3.5 oz each) instant vanilla pudding mix
3 cups milk
8 oz cream cheese, softened
1 cup whipped cream or cool whip
1 box (about 12 count) eclair shells
2 cups diced apples
1 cup caramel sauce
In a large bowl, whisk together the instant vanilla pudding mix and milk until smooth. Add softened cream cheese and mix until fully combined and creamy.
Gently fold in the whipped cream until the mixture is light and fluffy.
On the bottom of a 9×13 inch dish, arrange a single layer of eclair shells. You can cut them in half if you need to fit more.
Spread a generous amount of the pudding and cream cheese mixture over the eclair layer, smoothing it evenly.
Sprinkle the diced apples evenly over the filling.
Repeat the process with another layer of eclair shells, followed by the filling and apples.
Drizzle the caramel sauce over the top layer and refrigerate for at least 4 hours, or overnight for best results.
Before serving, cut into squares and drizzle more caramel sauce if desired. Enjoy!
