1 lb chicken sausage
1 cup carrots, diced
1 cup celery, diced
1 onion, diced
4 cups chicken broth
2 cups spinach
1 tsp garlic powder
1 tsp Italian seasoning
Salt and pepper to taste
Prepare the Sausage: Slice the chicken sausage into bite-sized pieces.
Sauté the Vegetables: In a large pot over medium heat, add olive oil, then add the diced onion, carrots, and celery. Sauté for about 5 minutes until translucent.
Add the Sausage: Add the sliced chicken sausage and cook for an additional 5-7 minutes.
Pour in the Broth: Add the chicken broth, garlic powder, and Italian seasoning, stirring well.
Add Spinach: Once boiling, reduce heat and add spinach; wilt for 2-3 minutes.
Season: Taste and season with salt and pepper to liking, adding red pepper flakes if desired.
Serve Hot: Serve in bowls and garnish with fresh herbs if desired.
