1 cup unsalted butter, softened
1 cup granulated sugar
2 cups all-purpose flour
1 teaspoon vanilla extract
3 cups diced apples
1 teaspoon cinnamon
1 cup caramel sauce
Preheat your oven to 350°F (175°C).
In a mixing bowl, beat together the softened butter and sugar until light and fluffy.
Gradually mix in the flour and vanilla until a dough forms.
Line a 9×13 inch baking dish with parchment paper and press 2/3 of the dough into the bottom.
In a separate bowl, combine the diced apples, cinnamon, and any additional sweeteners.
Pour the apple mixture over the pressed shortbread crust and crumble the remaining dough on top.
Bake for 30-35 minutes or until the top is golden and the apples are tender.
Allow to cool completely and drizzle with caramel sauce before serving.
Slice into bars and enjoy!
