1 cup pearl barley
1 medium onion, chopped
2 carrots, diced
2 celery stalks, diced
4 cups vegetable broth
2 cups spinach
2 cloves garlic, minced
1 teaspoon bay leaves
Rinse the pearl barley under cold water and set it aside.
In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent (about 5 minutes).
Stir in the diced carrot and celery. Cook for another 5 minutes, allowing the flavors to meld.
