Fluffy Vegan Pumpkin Donuts with Salted Caramel Glaze

Delicious moist and fluffy vegan pumpkin donuts topped with a sweet salted caramel glaze, perfect for a morning snack or a delightful treat.

  • 1 cup pumpkin puree
  • 1/2 cup almond milk (or other plant-based milk)
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 2 cups all-purpose or gluten-free flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 cup powdered sugar
  • 2 tablespoons coconut cream
  • 1 tablespoon sea salt (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Lightly grease a donut pan with coconut oil.
  3. In a mixing bowl, combine pumpkin puree, almond milk, maple syrup, and melted coconut oil.
  4. In another bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt.
  5. Pour the dry mixture into the wet mixture and stir until just combined.
  6. Fill each cavity of the donut pan about 3/4 full with the batter.
  7. Bake in the preheated oven for 18-20 minutes, checking with a toothpick.
  8. Allow to cool in the pan for a few minutes, then transfer to a wire rack.
  9. In a small bowl, mix powdered sugar and coconut cream to make the glaze.
  10. Dip the tops of the cooled donuts into the glaze and sprinkle with sea salt.
  11. Serve and enjoy!

These donuts are best enjoyed fresh. For storage, keep them in an airtight container.
