Healthy Greek Stuffed Peppers

Delicious bell peppers stuffed with ground beef, chickpeas, and feta cheese, topped with tzatziki sauce for a nutritious meal.

  • 4 large bell peppers
  • 1 cup cooked chickpeas
  • 1 pound ground beef
  • 1 cup feta cheese, crumbled
  • 1/2 cup tzatziki sauce
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, heat olive oil over medium heat and cook the ground beef until browned, about 5-7 minutes.
  4. Mix in cooked chickpeas, garlic powder, onion powder, salt, and pepper; cook for another 5 minutes.
  5. Remove from heat and fold in crumbled feta cheese.
  6. Fill each bell pepper with the beef and chickpea mixture.
  7. Arrange the stuffed peppers in a baking dish.
  8. Cover with foil and bake in the preheated oven for 25-30 minutes.
  9. Remove foil and bake for an additional 10 minutes.
  10. Serve topped with tzatziki sauce and garnish with fresh parsley, if desired.

Feel free to customize the filling with other ingredients like lentils or additional vegetables for a vegetarian option.
