4 medium potatoes, diced
1 onion, chopped
3 carrots, sliced
2 stalks celery, chopped
6 cups vegetable or chicken broth
1 cup cream or milk
1 cup cooked bacon or ham

Prepare the ingredients: Wash and chop all the vegetables as indicated in the ingredients list. If pre-prepping, store the veggies in an airtight container in the fridge overnight.
Cook the bacon/ham: In a skillet over medium heat, cook the bacon or ham until crispy. Drain excess fat and set aside.
Layer the ingredients: In your slow cooker, add the diced potatoes first, followed by onions, carrots, celery, and the cooked bacon or ham.
Add broth: Pour in the vegetable or chicken broth, ensuring all ingredients are submerged.
Set the slow cooker: Cook on low for 6-8 hours or high for 3-4 hours. The longer it cooks, the more the flavors meld!
Add cream/milk: In the last 30 minutes of cooking, stir in the cream or milk for a rich, creamy texture. Adjust the seasoning to your taste.
Serve: Once cooked, ladle the soup into bowls and garnish with your favorite toppings such as fresh herbs or croutons.
