1 cup unsalted butter, softened
1 cup brown sugar
1/2 cup pure maple syrup
2 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
1 tsp vanilla extract
1 egg
Preheat your oven to 350°F (175°C) and prepare a baking sheet by lining it with parchment paper.
In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy, about 3-5 minutes.
Add the maple syrup, egg, and vanilla extract to the mixture, beating until well combined.
In another bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, stirring just until everything is combined.
Using a cookie scoop or spoon, drop dough onto the prepared baking sheet, spacing them about 2 inches apart.
Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
Remove from the oven and let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
