Maple Glazed Apple and Brie Stuffed Chicken

A delightful dish that combines the sweetness of maple syrup, creaminess of brie, and crunch of honeycrisp apples, perfect for entertaining or family dinners.

  • 4 pieces boneless chicken breasts
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 piece honeycrisp apple, sliced thin
  • 4 ounces brie cheese, sliced thin
  • 1 cup apple cider or apple juice
  • 2 tablespoons pure maple syrup
  • ½ tablespoon minced garlic
  • 1 teaspoon Dijon mustard
  • 2 teaspoons fresh thyme, removed from stems
  • ½ teaspoon kosher salt

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Carefully cut a pocket into each chicken breast.
  3. Season the inside and outside of each breast with kosher salt and black pepper.
  4. In a bowl, combine honeycrisp apple slices and brie cheese.
  5. Stuff the apple and brie mixture into the chicken breasts.
  6. In a saucepan, combine apple cider (or apple juice), maple syrup, minced garlic, Dijon mustard, fresh thyme, and kosher salt, and let it simmer.
  7. Sear the stuffed chicken breasts in a hot skillet until browned on each side (about 2-4 minutes per side).
  8. Pour the glaze over the chicken and transfer it to the oven, baking for 20-25 minutes or until the chicken reaches 165°F (74°C).
  9. Let the chicken rest for a few minutes before serving.

Notes

Pair with roasted vegetables or salad for a complete meal. Leftovers can be stored in the refrigerator for 3-4 days.
