Moist Pineapple Juice Cake

  • 1 cup Pineapple Juice
  • 2 cups All-Purpose Flour
  • 1 cup Granulated Sugar
  • 3 large Eggs
  • 2 teaspoons Baking Powder
  • 1/2 cup Vegetable Oil
  • 1 cup Powdered Sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour a 9×13 inch baking pan.
  3. In a large bowl, mix the flour and baking powder.
  4. In another bowl, whisk together sugar and vegetable oil, then add eggs and pineapple juice.
  5. Gradually add dry ingredients to wet mixture, stirring gently.
  6. Pour the batter into the prepared baking pan.
  7. Bake for 30 to 35 minutes, checking for doneness with a toothpick.
  8. Allow the cake to cool for 10 minutes, then transfer to a wire rack.
  9. For the glaze, mix powdered sugar with pineapple juice until pourable.
  10. Drizzle the glaze over the cooled cake before serving.

Notes

For added flavor, use fresh pineapple juice. Experiment with variations by adding coconut or other fruits.
