2 cups crushed graham crackers or granola
1/2 cup unsalted butter, melted
16 oz cream cheese, softened
1 cup powdered sugar
1 teaspoon vanilla extract
4 apples, cored and chopped
1 cup caramel sauce
In a medium bowl, combine the crushed graham crackers (or granola) with melted butter. Mix well until evenly coated. Press the mixture into the bottom of a 9-inch springform pan. Use the back of a measuring cup to compact it tightly.
In a large mixing bowl, beat the cream cheese until smooth. Gradually add the powdered sugar, mixing on low speed until fully incorporated. Stir in vanilla extract.
Fold in the chopped apples gently until they are evenly distributed throughout the cream cheese mixture.
Pour the cream cheese and apple mixture into the prepared crust, smoothing the top with a spatula.
Cover the cheesecake with plastic wrap and refrigerate for at least 4 hours, or overnight for better results.
Once set, remove the cheesecake from the refrigerator. Drizzle the top with caramel sauce before serving, or serve it on the side so guests can add it themselves.
