1 lb ground beef
1 medium onion, diced
2 cups beef broth
1 cup diced carrots
1 cup diced potatoes
8 oz sharp cheddar cheese, shredded
Salt and pepper, to taste
In a large pot, brown the ground beef over medium heat. Once browned, drain excess fat and set the meat aside.
In the same pot, add the diced onion, carrots, and potatoes. Sauté for about 5 minutes until they begin to soften.
Pour in the beef broth and bring the mixture to a boil.
Return the cooked ground beef back to the pot along with salt and pepper to taste. Reduce the heat to low and let it simmer, covered, for about 20 minutes.
Once the vegetables are tender, stir in the shredded cheddar cheese until melted and creamy. Adjust seasoning as needed.
Ladle the soup into bowls and enjoy! Optional toppings include more cheese, chives, or croutons.
