Orange Cranberry Bread

A delightful bread combining bright citrus flavors with tart cranberries, perfect for breakfast, snacks, or dessert.

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup orange juice
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tablespoon grated orange zest
  • 1 cup fresh or frozen cranberries
  • 1 cup powdered sugar (for glaze)
  • 23 tablespoons orange juice (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, combine flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk orange juice, vegetable oil, eggs, and orange zest.
  4. Pour wet ingredients into dry ingredients and mix until just combined.
  5. Fold in cranberries gently.
  6. Transfer batter to the prepared loaf pan.
  7. Bake for 55-65 minutes, or until a toothpick inserted comes out clean.
  8. Let cool in the pan for 10 minutes before transferring to a wire rack.
  9. For the glaze, whisk powdered sugar with orange juice until smooth and drizzle over the cooled bread.
  10. Slice and serve, enjoying with coffee or tea.

Serve warm or at room temperature; pairs well with cream cheese or butter.
