Orange Cranberry Bread

A delightful combination of sweet and tart flavors, this Orange Cranberry Bread is perfect for breakfast, snacks, or dessert.

  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup orange juice
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 tablespoon grated orange zest
  • 1 cup fresh or frozen cranberries
  • 1 cup powdered sugar (for glaze)
  • 23 tablespoons orange juice (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In a separate bowl, combine the orange juice, vegetable oil, egg, and grated zest. Whisk until mixed.
  4. Pour the wet mixture into the dry ingredients and mix gently until just combined. Fold in the cranberries.
  5. Transfer the batter to the greased loaf pan and spread evenly.
  6. Bake for 50-60 minutes, checking with a toothpick for doneness.
  7. Let the bread cool in the pan for 10-15 minutes before transferring to a wire rack.
  8. For the glaze, mix powdered sugar with orange juice until smooth, then drizzle over the cooled bread.
