  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup fresh cranberries, chopped
  • 1/2 cup orange juice
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 2 teaspoons orange zest
  • 1/2 cup powdered sugar (for glaze)
  • 1 tablespoon orange juice (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a large mixing bowl, whisk together the all-purpose flour, sugar, baking powder, baking soda, and salt until well combined.
  3. Add the chopped cranberries to the dry mixture and stir gently to coat them with flour.
  4. In another bowl, mix together the orange juice, vegetable oil, eggs, and orange zest until combined.
  5. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  6. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  7. Bake in the preheated oven for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  8. Let the bread cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
  9. For the glaze, mix the powdered sugar with the orange juice until smooth and drizzle over the cooled bread.

Notes

Use fresh cranberries for best flavor, and don’t overmix to keep the bread light and fluffy.
