Orange Cranberry Bread

A delightful bread combining the tartness of cranberries with the sweet, zesty flavors of orange, perfect for any occasion.

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup fresh or frozen cranberries, chopped
  • 1/2 cup orange juice
  • 1/4 cup vegetable oil
  • 2 eggs
  • 1 tablespoon grated orange peel
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, combine flour, sugar, baking powder, baking soda, and salt; whisk until mixed.
  3. Toss chopped cranberries in the dry mixture to coat.
  4. In another bowl, whisk together orange juice, vegetable oil, eggs, grated orange peel, and vanilla extract.
  5. Pour the wet mixture into the dry ingredients and stir gently until combined.
  6. Transfer the batter to the prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes, checking for doneness with a toothpick.
  8. Let cool in the pan for 10 minutes before transferring to a wire rack.
  9. Optionally, glaze with a mixture of powdered sugar and orange juice.

Notes

Store in an airtight container at room temperature or refrigerate for longer storage. Freezing is also an option for up to three months.
