Peanut Butter & Chocolate Baked Oats

These baked oats combine the beloved flavors of peanut butter and chocolate for a nutritious and satisfying breakfast option.

  • 2 cups Old fashioned oats
  • 1 cup Oat milk
  • 1 cup Peanut butter (creamy or crunchy)
  • 1/2 cup Applesauce
  • 1/4 cup Agave or honey
  • 2 teaspoons Baking powder
  • 1 teaspoon Vanilla
  • 1/2 teaspoon Salt
  • 1/2 cup Protein powder (optional)
  • 1/2 cup Mini chocolate chips
  • 2 tablespoons Additional peanut butter (for drizzling)
  • 1 square Chocolate square
  • 1/4 cup Extra chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking dish.
  2. In a large mixing bowl, combine old-fashioned oats, baking powder, salt, and protein powder if using.
  3. In another bowl, mix oat milk, peanut butter, applesauce, agave or honey, and vanilla until smooth.
  4. Pour the wet mixture into the dry ingredients and stir until combined, folding in mini chocolate chips gently.
  5. Transfer the mixture to the prepared baking dish and spread it evenly.
  6. Bake for 30 to 35 minutes until the edges are golden and the center feels set.
  7. Remove from the oven and drizzle melted chocolate and additional peanut butter on top.
  8. Let cool slightly, slice into squares, and serve warm with toppings like fresh fruit or yogurt.

Notes

These baked oats can be made ahead of time and stored in the fridge or freezer for later meals.
