Quick Ham and Bean Soup

A hearty and comforting soup featuring ham, beans, and fresh vegetables, perfect for a quick weeknight meal.

  • 1 lb Ham (bone or diced)
  • 2 cups Beans (dry or canned)
  • 1 medium Onion
  • 2 medium Carrots
  • 2 stalks Celery
  • 3 cloves Garlic
  • 6 cups Chicken broth or water
  • 2 leaves Bay leaves
  • 1 teaspoon Thyme
  • 1 teaspoon Black pepper
  • 1/4 cup Fresh parsley

Instructions

  1. Prepare the Ingredients: Chop the ham and dice the onion, carrots, celery, and mince garlic.
  2. Sauté the Vegetables: Heat oil in a large pot, add onions, carrots, and celery, and sauté for 5-7 minutes. Add garlic and cook for 1 more minute.
  3. Add the Ham: Incorporate diced ham and cook briefly to meld the flavors.
  4. Pour in the Liquid: Add 6 cups of chicken broth or water and stir to combine.
  5. Include the Beans and Seasonings: Add beans, bay leaves, thyme, and black pepper. Stir to combine.
  6. Let It Simmer: Bring to a simmer and cook for 30-45 minutes over low heat.
  7. Final Touches: Remove bay leaves and ham bone, shreds any remaining meat and return to the soup.
  8. Garnish and Serve: Serve hot, garnished with fresh parsley.

Notes

Serve with crusty bread or over rice for a heartier meal. Customize by adding more vegetables or spices as desired.
