Chicken Breast (cubed)
Heavy Cream
Vegetable Broth
Bell Peppers (any color)
Tortilla Strips
Onions
Garlic
Salt
Pepper
Optional toppings: cheese, sour cream, cilantro, avocado, lime juice
Season raw chicken with salt and pepper. In a large pot, heat oil over medium heat, sauté chicken until browned and cooked through (5-7 minutes). Remove and set aside.
In the same pot, add oil if needed, sauté onions, garlic, and bell peppers for 3-5 minutes until softened.
Pour in vegetable broth, stir to combine. Add cooked chicken back to the pot along with any additional spices.
Reduce heat to low, stir in heavy cream and let it simmer gently for about 10 minutes.
Taste and adjust seasoning as desired. Serve hot with tortilla strips and toppings.
