Savory Chicken Pumpkin Curry

A comforting and hearty dish that combines pumpkin and tender chicken with aromatic spices, perfect for cold weather.

  • 2 tablespoons Vegetable Oil
  • 21 oz Boneless, Skinless Chicken Thighs
  • 1 Red Onion, minced
  • 2 cloves Garlic, crushed
  • 1 tablespoon Ground Fresh Turmeric
  • 1 tablespoon Ground Cumin
  • 2 teaspoons Ground Coriander Seeds
  • 1 tablespoon Sambal Oelek (adjust for spice preference)
  • 14.1 oz Pumpkin, cubed
  • 1.6 cups Chicken Stock
  • 1 bunch Fresh Coriander Leaves, chopped (for garnish)
  • 0.25 cups Coconut Cream or Regular Heavy Cream (optional)

Instructions

  1. Dice the chicken into bite-sized pieces, mince the onion, crush the garlic, and cube the pumpkin. Chop the coriander leaves for garnish.
  2. In a large pot, heat vegetable oil over medium heat.
  3. Add the diced chicken and cook for about 5 to 7 minutes until browned.
  4. Add the minced onion and crushed garlic, sauté for 3 to 4 minutes until fragrant.
  5. Sprinkle in ground turmeric, ground cumin, and ground coriander, stirring for 1 minute.
  6. Stir in sambal oelek for heat, adjusting based on spice preference.
  7. Add cubed pumpkin and mix well with the chicken and spices.
  8. Pour in chicken stock, bring to a simmer.
  9. Cover and cook for 20 to 25 minutes until chicken is tender.
  10. Stir in coconut cream if using, and simmer for an additional 5 minutes.
  11. Garnish with chopped coriander leaves and serve hot with rice or naan.

Notes

Serve with rice or naan bread. Adjust spices to preference. Can be made vegetarian by substituting chicken with chickpeas or tofu.
