Savory Kefta Roasted Chicken with Garlic and Shallots Delight

A delicious Mediterranean roasted chicken dish featuring a unique Kefta rub, shallots, and garlic, perfect for family gatherings or a cozy dinner.

  • 1 whole chicken (about 4 lb)
  • 3 tablespoons Villa Jerada Kefta rub for chicken
  • 1 teaspoon Kosher salt
  • 35 Shallots, cut in quarters lengthwise
  • 3 medium Lemons, cut into quarters
  • 2 whole Garlic bulbs, tops cut to expose the cloves
  • 23 tablespoons Olive oil
  • 1/2 teaspoon Black pepper
  • 1 cup Chicken stock
  • 1/4 cup Fresh parsley, chopped
  • Fresh thyme sprigs (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rinse the whole chicken under cold water and pat dry with paper towels.
  3. Mix Kefta rub, Kosher salt, and black pepper in a bowl and rub all over the chicken.
  4. Stuff the chicken cavity with quartered shallots, lemons, and garlic bulbs.
  5. Drizzle olive oil in a roasting pan and place the chicken breast side up. Surround with remaining shallots, lemons, and garlic.
  6. Pour chicken stock around the chicken in the pan.
  7. Roast for about 1 hour and 15 minutes until the internal temperature reaches 165°F (75°C).
  8. Remove from the oven and let rest for 15-20 minutes.
  9. Garnish with chopped parsley and thyme before serving.
  10. Carve and serve with roasted vegetables and sauce from the pan.

Notes

Marinating the chicken for several hours enhances the flavors. Feel free to add other vegetables to the roasting pan.
