Simple Lime Gelatin Salad

A vibrant and refreshing lime-flavored gelatin salad that’s easy to make and perfect for gatherings.

Ingredients

  • 6 ounces lime gelatin (Two 3-ounce packages)
  • 2 cups boiling water
  • 1 quart lime sherbet
  • 8 ounces frozen whipped topping

Instructions

  1. Boil 2 cups of water in a pot.
  2. Remove from heat and add the lime gelatin, stirring until completely dissolved.
  3. Let the mixture cool for about 15 minutes.
  4. Add the lime sherbet and stir gently until fully melted and combined.
  5. Fold in the thawed whipped topping gently to keep its lightness.
  6. Transfer the mixture to a lightly greased mold or serving dish.
  7. Cover and refrigerate for at least 4 hours or until firm.
  8. Once set, serve directly from the bowl or unmold onto a platter, garnished if desired.

Notes

Store leftovers covered in the refrigerator for up to 3-5 days, or freeze for up to a month. Consider adding fruits or trying different flavored gelatin for variations.
