Soft Honey Cookies

These delightful Soft Honey Cookies combine the rich sweetness of honey with a tender, chewy texture. Perfect for any occasion, they’re easy to make and allow for various dietary adaptations.

  • 2 large Eggs (or flax eggs for vegan option)
  • 1/2 cup Neutral Oil (Vegetable or light olive)
  • 1/2 cup Honey (or agave nectar for vegan cookies)
  • 2 cups All-Purpose Flour (or gluten-free flour blend)
  • 1/2 cup Granulated Sugar (adjust if using more honey)
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1 teaspoon Ground Saigon Cinnamon (optional)
  • 1/4 teaspoon Salt
  • 1/4 cup Additional Granulated Sugar (for rolling)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper.
  3. In a large mixing bowl, mix eggs, oil, and honey. If using flax eggs, combine 2 tablespoons of flaxseed meal with 6 tablespoons of water and let sit until gel-like.
  4. In another bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  6. Form and roll dough balls (about 1-inch in diameter) in the additional sugar and place on the prepared baking sheet with space between each cookie.
  7. Bake for 10-12 minutes until edges are golden and centers are soft.
  8. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

For a vegan version, use flax eggs and agave nectar. Chill the dough for 30 minutes to prevent excessive spreading.
