1 box yellow cake mix
½ cup unsalted butter, melted
1 egg
8 oz cream cheese, softened
2 cups pumpkin puree
3 cups powdered sugar
1 teaspoon vanilla extract
1 teaspoon pumpkin pie spice
Preheat Your Oven: Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan with non-stick spray or line it with parchment paper for easy removal.
Prepare the Cake Base: In a large mixing bowl, combine the yellow cake mix, melted butter, and 1 egg. Mix until well combined. The batter will be thick; that’s perfectly normal.
Spread the Batter: Evenly spread the cake batter into the prepared baking pan and press it down gently.
Make the Filling: In another bowl, beat the softened cream cheese until smooth. Add the pumpkin puree, powdered sugar, vanilla extract, and pumpkin pie spice. Mix until fully combined and creamy.
Pour the Filling: Pour the pumpkin filling over the cake layer in the baking pan. Use a spatula to spread it out evenly.
Bake the Cake: Bake in the preheated oven for about 30-40 minutes, or until the edges are golden and the center is set but still slightly jiggly.
Cool and Serve: Allow the cake to cool in the pan for at least 15 minutes. Once cooled, slice it into squares and serve plain, or with whipped cream for an extra treat!
