1 lb Ground beef or turkey
1 medium onion, chopped
3 cloves garlic, minced
6 cups chicken or vegetable broth
2 cups marinara sauce
8 oz lasagna noodles, broken into pieces
2 cups baby spinach
1 cup ricotta cheese
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
Brown the meat in a large pot over medium heat for about 5-7 minutes.
Add chopped onion and minced garlic, cooking for an additional 3-4 minutes.
Incorporate chicken or vegetable broth and marinara sauce, stirring well to combine.
Bring to a gentle boil, then add lasagna noodles and reduce heat to medium-low. Cook until al dente, about 10 minutes.
Add spinach and cook until wilted, about 2 minutes.
Serve in bowls, garnishing with ricotta, mozzarella, and Parmesan.
