Toasted Coconut Soft Sugar Cookies

  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup sweetened shredded coconut
  • 1 cup coconut butter or frosting for topping
  • 1/2 cup toasted coconut flakes for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking powder, and salt.
  3. Cream the softened butter and granulated sugar together until light and fluffy.
  4. Add the egg and vanilla extract, mixing until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined.
  6. Fold in the sweetened shredded coconut.
  7. Drop tablespoons of dough onto a parchment-lined baking sheet, spacing them 2 inches apart.
  8. Bake for 10-12 minutes, until the edges are golden while the centers look soft.
  9. Cool briefly on the baking sheet before transferring to a wire rack.
  10. Top with coconut butter or frosting and garnish with toasted coconut flakes.

Notes

Store cooled cookies in an airtight container at room temperature for up to a week. For longer storage, refrigerate or freeze as needed.
