Zesty Olive Garden Salad

A vibrant and flavorful salad packed with fresh vegetables and a zesty dressing.

Ingredients

  • 8 cups chopped Lettuce
  • 1/4 cup shredded red cabbage
  • 1/4 cup julienned Carrots
  • 1/4 cup diced Red onion
  • 1/2 cup sliced black olives
  • 2 Roma tomatoes, diced
  • 1/3 cup sliced pepperoncinis
  • 1 cup croutons
  • 1/4 cup grated Parmesan cheese
  • 3/4 cup extra virgin olive oil
  • 1 packet Zesty Italian Dressing Mix
  • 1/3 cup white vinegar
  • 1/4 cup water
  • 1 tablespoon grated Romano cheese
  • 3 teaspoons sugar
  • 1 1/2 teaspoons mayo
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon garlic powder

Instructions

  1. Wash all the vegetables thoroughly and chop the lettuce into bite-sized pieces. Place in a large salad bowl.
  2. Add the shredded red cabbage, julienned carrots, and diced red onions.
  3. Slice the black olives and dice the Roma tomatoes. Add to the bowl.
  4. Slice the pepperoncinis into rings and add to the mixture.
  5. Sprinkle croutons and grated Parmesan cheese over the salad.
  6. In a separate bowl, combine the olive oil, Zesty Italian Dressing mix, white vinegar, water, grated Romano cheese, sugar, mayo, Dijon mustard, Italian seasoning, salt, pepper, and garlic powder. Whisk until smooth.
  7. Pour the dressing over the salad just before serving and toss to coat.

Notes

Best consumed within 2-3 days for optimal freshness. Keep dressing separate until serving to maintain crispness.
