- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. This should take about 2-3 minutes with an electric mixer.
- Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract until fully incorporated.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing just until combined.
- Stir in the oats and chocolate chips until evenly distributed throughout the dough. The dough will be thick and hearty.
- Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart to allow for spreading.
- Bake for 10-12 minutes, or until the edges are golden brown but the centers still look slightly soft. For chewier cookies, bake for the shorter time.
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
Don't overmix once flour is added. For thicker cookies, chill dough for 30 minutes before baking. Use high-quality chocolate chips for best flavor. Cookies can be customized with nuts or dried fruit.
