  • 2 cups chicken broth
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1 medium onion, diced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 2 tbsp Cajun seasoning
  • 1 tsp smoked paprika
  • 1/2 tsp dried thyme
  • 1/2 tsp dried oregano
  • Salt and black pepper to taste
  • Fresh parsley for garnish

  1. Heat olive oil in a large skillet over medium-high heat. Add the sliced chicken sausage and cook until browned, about 5-7 minutes. Remove sausage and set aside.
  2. In the same skillet, add diced onion, bell peppers, and celery. Sauté until vegetables are softened, about 5 minutes. Add minced garlic and cook for another minute until fragrant.
  3. Stir in the rice, Cajun seasoning, smoked paprika, thyme, and oregano. Cook for 2 minutes, stirring constantly to coat the rice with the spices and oil.
  4. Pour in the chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 18-20 minutes until rice is tender and liquid is absorbed.
  5. Return the cooked sausage to the skillet, stir to combine, and cook for another 2-3 minutes to heat through. Season with salt and pepper to taste.
  6. Garnish with fresh parsley and serve hot directly from the skillet.

Notes

For best results, use high-quality chicken sausage with good flavor. The smokiness complements the Cajun spices perfectly. Add cayenne pepper or red pepper flakes for extra spiciness.
