- Heat olive oil in a large skillet over medium-high heat. Add the sliced chicken sausage and cook until browned, about 5-7 minutes. Remove sausage and set aside.
- In the same skillet, add diced onion, bell peppers, and celery. Sauté until vegetables are softened, about 5 minutes. Add minced garlic and cook for another minute until fragrant.
- Stir in the rice, Cajun seasoning, smoked paprika, thyme, and oregano. Cook for 2 minutes, stirring constantly to coat the rice with the spices and oil.
- Pour in the chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 18-20 minutes until rice is tender and liquid is absorbed.
- Return the cooked sausage to the skillet, stir to combine, and cook for another 2-3 minutes to heat through. Season with salt and pepper to taste.
- Garnish with fresh parsley and serve hot directly from the skillet.
Notes
For best results, use high-quality chicken sausage with good flavor. The smokiness complements the Cajun spices perfectly. Add cayenne pepper or red pepper flakes for extra spiciness.
