  • 1 teaspoon baking powder

  • 1 cup buttermilk
  • 1 cup vegetable oil
  • 2 teaspoons pure vanilla extract
  • 1 cup boiling water

  1. Preheat oven to 350°F (175°C) and generously grease a 10-cup bundt pan
  2. In a large mixing bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder, and salt until well combined
  3. Add eggs, buttermilk, vegetable oil, and vanilla extract to the dry ingredients and beat on medium speed for about 2 minutes until smooth
  4. Carefully pour in boiling water and mix on low speed until just combined
  5. Pour batter into prepared bundt pan and bake for 45-55 minutes, or until toothpick inserted comes out with just a few moist crumbs
  6. Allow cake to cool completely in pan before inverting onto serving plate

Notes

Use room temperature ingredients for better emulsion and more even baking. Don't overmix after adding the water - a few gentle stirs are all you need. The cake tastes better the next day as flavors meld.
