  • 4 cups vegetable broth
  • 1/2 cup fresh lemon juice (about 3-4 lemons)
  • 1/4 cup extra virgin olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried dill
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons fresh mint, chopped
  • Salt and black pepper to taste
  • Lemon zest from 2 lemons

Method

  1. Rinse the rice under cold water until the water runs clear. This removes excess starch and prevents the rice from becoming gummy.
  2. In a large saucepan, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
  3. Add the rinsed rice to the pan and stir to coat with the oil. Toast the rice for 2-3 minutes, stirring constantly, until it becomes slightly translucent around the edges.
  4. Pour in the vegetable broth and lemon juice. Add the dried oregano, dill, salt, and pepper. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes.
  5. Remove from heat and let the rice stand covered for 5 minutes. Then fluff with a fork and stir in the fresh parsley, mint, and lemon zest.

Notes

Use freshly squeezed lemon juice rather than bottled for brighter flavor. Leftover rice makes excellent fried rice the next day. Pairs beautifully with grilled chicken, fish, or roasted vegetables.
