Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or aluminum foil for easy cleanup.
- Pat the chicken thighs dry with paper towels - this helps achieve that perfect crispy skin. In a small bowl, mix together the olive oil, smoked paprika, garlic powder, onion powder, black pepper, and salt. Rub this seasoning mixture evenly over both sides of the chicken thighs.
- Arrange the seasoned chicken thighs skin-side up on the prepared baking sheet, making sure they're not touching each other. Bake for 25 minutes to allow the skin to crisp up and the chicken to cook through.
- Remove the baking sheet from the oven and carefully brush each thigh generously with barbecue sauce. If using brown sugar, you can sprinkle it lightly over the sauced chicken at this point for extra caramelization.
- Return to the oven and bake for an additional 10-15 minutes, or until the internal temperature reaches 165°F (74°C) and the sauce has caramelized to a beautiful sticky glaze.
- Let the chicken rest for 5 minutes before serving to allow the juices to redistribute. Garnish with fresh parsley and serve immediately.
Notes
For the crispiest skin, make sure your chicken thighs are completely dry before seasoning. Don't add the barbecue sauce too early! The sugar in the sauce can burn if exposed to high heat for too long. If you love extra crispy skin, you can finish the chicken under the broiler for 1-2 minutes at the very end.
