  • 8 slices of fresh white or whole grain bread
  • 1 large cucumber, thinly sliced
  • 8 oz cream cheese, softened
  • 2 tbsp fresh dill, finely chopped
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • 1 tbsp butter, softened (optional, for spreading)

  1. In a small bowl, mix the softened cream cheese, chopped dill, lemon juice, salt, and pepper until well combined.
  2. Using a sharp knife or a mandoline, thinly slice the cucumber. Pat the slices dry with a paper towel to remove excess moisture if desired.
  3. Lay out the slices of bread on a clean surface. If desired, lightly butter one side of each slice. Spread a generous layer of the cream cheese mixture onto the unbuttered side of each slice. Arrange the cucumber slices evenly over the cream cheese on half of the bread slices. Top with the remaining slices of bread, cream cheese side down.
  4. Using a sharp knife, carefully trim the crusts off the sandwiches for a classic tea sandwich look. Cut each sandwich into quarters or halves, depending on your preference. Arrange them on a platter and serve immediately.

Notes

Choose soft, fresh bread like white or whole grain for the best results. To prevent sogginess, assemble the sandwiches just before serving. Fresh herbs like mint or chives can be added to the cream cheese spread for extra flavor.
